of main local wine district, piedmont wine region and Veneto wine region.

Piedmont Wine Region

Tucked into the mountainous northwest corner of Italy, Piedmont borders Switzerland and France and sits

snuggly between the Alps and Apennines. In fact, the Italian word piemonte means "foot of the mountain."

As a wine producing region, Piedmont reaches rarely rivaled heights with Barolo and Barbaresco, two

world-class wines made from Nebbiolo grapes. Barolos are rich, rose-scented wines, robust and tannic,

capable of (and often requiring) long aging. Other important red grapes of Piedmont are Barbera and Dolcetto,

represented in the sub-appellations Asti and Alba. Barbera is very versatile with food, particularly grilled meats

and tomato-based sauces. Dolcetto is a round fruity wine best drunk young. The sweet sparkling white wine

Asti is made here from Muscat grapes, as is the dry white Gavi, made from Cortese grapes.

Veneto Wine Region

Viewed on a map, the Veneto region looks something like a honking cartoon donkey. It borders the Adriatic

Sea in Northeast Italy and runs from just west of Friuli to Verona, encompassing along the way two other

famous V-named Italian cities, Vicenza and Venice. Three of the more recognizable appellations in Veneto are

Soave, Valpolicella and Bardolino. Soave is the most popular of Italy's white wines. Known for its easy,

approachable style, Soave is made from native Garganega and Trebbiano grapes. Veneto is also the home of

Prosecco, the white grape that makes relatively inexpensive but tasty sparkling wine. Amidst all of this white

wine, Valpolicella and Bardolino duly represent Veneto's red wine faction, making fruity, early drinking red

wines from blends of Vorvina, Rondinella and Molinara grapes. These same grapes are semi-dried to produce

opulent Amarone della Valpolicella, a rich and wonderful wine capable of long cellaring. Veneto is also gaining

a reputation for Cabernet Sauvignon and Merlot.


Favorite Red Wines of Veneto: Valpolicella, Bardolino, Amarone della Valpolicella, Cabernet Sauvignon,

Merlot.

Italian rice

Italy is the country that boasts the largest production of rice in Europe and Piemonte accounts for around 60%

of national production with 120,000 hectares of cultivated land, 56 factories and 11 companies. The provinces

of Novara, Vercelli and Alessandria in fact produce around 0.6 million tons of rice, more than 50% of the EU rice

production and exports roughly 70%


Here, the phenomenon of submersion, a characteristic of rice fields, has transformed the land at the foot of the

Alps (Literal translation of “Piemonte”), turning it into an area affectionately known as Land of Water.


The rice is produced in an environment friendly and organic way and sees the production of a number of prized

and traditional varieties, identifiable according to the ground in which they were grown. Among the most famous:

Carnaroli, S. Andrea, Arborio, Baldo, Balilla, Vialone Nano and Roma (some of these are in line to be awarded the

DOP and IGP labels, EEC law 2081/92):


CARNAROLI This long grain rice is considered one of the best Italian varieties and it belongs to the highest level

of our production. The starch contained in its grain is rich in amylose and thanks to this pecularity Carnaroli rice is

perfect for all rice dishes and ideal for risottos and rice salads.


S. ANDREA Deriving from “Rizotto” variety, this rice belongs to the Italian merchandising group called rice “fini”

(medium grain). Thanks to the compactness of its grains, it goes well simply boiled or for rice soups and traditional

risotto.


ARBORIO For many years its name has been, especially abroad, synonym of good Italian rice. Unfortunately it is

often mixed with other rice, so that it has lost most of its value on the market, but when you can use some real

Arborio, you can taste the difference; bigger grains that always remain “al dente” while yielding just enough starch

to make soups and risottos more creamy


BALDO Deriving form Arborio, Baldo can be considered an emerging variety. This “long grain” rice has quite large

grains and excellent absorption capacity. It is recommended for risotto, salads and it is also suitable for baking.


BALILLA This variety is also known as “Originario” because up to last century it was the only rice cultivated and

available in Italy. It is a “short” rice with small and rounded grains recommended  for rice soups, sweets and desserts.


VIALONE NANO The grains of this short rice, small, rounded and very rich in amylose have a good compactness

and an excellent yield in cooking. For this reason Vialone Nano leads itself to different uses: the traditional risotto,

rice salads and many other dishes.


ROMA This variety belongs to the merchandising group called long rice, but it distinguishes itself from the other

long rice for a shorter time of cooking and a bigger loss of starch. It is largely used in restaurants for making timbales

or croquettes and all the risottos of the Piedmontese tradition.
